Bake Your Own Bread Year!!!

We have been doing ALL of our own baking this month, not by design, it sort of just happened.  I had given some thought to the notion of making it a permanent thing but not too seriously :) Well, I was perusing the Artisan Bread in Five Minutes a Day blog when I saw “BYOB” mentioned (Bake Your Own Bread).  Upon checking it out at The Baker’s Bench, I decided that my notion could be put into action and there are others out there trying it too!  I encourage you to check it out, this is going to be great fun and a big challenge with a baby due in the spring.  Thankfully bread making has already become a fun, and expected, family activity.  As long as I can mix up a bucket of dough, the kids and hubby can manage the rest, and have a great time doing it!

I have to say, adding bread baking to  our daily routine has been much easier than I expected. I usually start it before 9am and depending on what I am making it is ready to eat by either lunch or dinner.  Having a good schedule in place has helped tremendously.  It was an adjustment for all of us, but now we are very pleased with it and see it as a tool to help us rather than letting the schedule run us.  We get so much more accomplished, and when we need to set a few things aside for a visit with friends or an appointment, or some other interruption, it is not a big deal because we know we have time to make up the lost work. This morning, for example, we off for a short visit with friends, then the library, and finally home for lunch and school.  A full day, but it should be a good one!

Trying a new recipe…Baked Oatmeal

The children and I find our day gets off to a much better start if we all take the time to sit down to a good wholesome breakfast.  We are slowly finding favorites that are both quick and nutritious.  Over the holidays my friend Beth had us over for breakfast and cookie baking.  She made baked oatmeal and it was very filling!  My family loves oatmeal, but not the usual cooked like mush type (which I love, with apples, nuts, wheatgerm, etc…) so I thought I would try baking it.  Here is the recipe from Money Saving Mom: Frugal Breakfast Recipe- Baked Oatmeal.  I cut the sugar back to one cup and used half dark brown and half white sugar.  If this goes over well, I would like to try substituting honey next.  I am also letting the mixture sit for about 20 minutes to soften the oats before I put it in the oven.   We’ll see how it turns out!

I’m off to get my tea and rouse the children to start our school day!  Mondays are library day and we may go visit a friend if time and weather permit :)

Whole Wheat version of Artisan Bread- update

I experimented by substituting whole wheat flour for the all-purpose in the Master Recipe (scroll to bottom of page 4 of article).  Oh, my it was awful.  I threw it out.  I NEVER throw out bread.  The remaining dough was also tossed.  Everyone in my family disliked it.  My 16 year old son did say it was OK with sharp cheddar, but had a funky after taste. 

Next I will try the 100% Whole Wheat Sandwich Bread recipe that is given in the article.   I’ll let you know how it goes!

Artisan Bread the Easy Way!!!

A friend sent this article to me from Mother Earth News, Five Minutes a Day for Fresh Baked Bread.  Below are photos from my first attempt at making it.  It was quite successful, very easy, and the taste was out of this world!  My first batch was made with all-purpose flour, the second (which is in the oven as I type!) is whole wheat.  I like the white whole wheat flour available from King Arthur.

I made the basic boule.  First are the pics from the all-purpose batch followed by what I just ran to pull out of the oven, the whole wheat version.  I think I like the basic X slash best, the kids call it star bread Smile.

These two crackled really loudly when we took them out of the oven.

 

These two, not so much.  I had to put my ear right up to the bread to hear, but it was there!
